Vineyard & Harvest Notes
We look for the grape's maximum maturity by sampling and tasting grapes in the field, technical information is not enough, we must taste to determine the magic moment of harvest. For Spellbound optimal ripeness means that the grapes are bursting with flavor yet they still retain crispness. Timing the harvest is key, as perfect ripeness provides richness of black fruits, and beautiful balance in the wine.
Tasting Notes
Our Spellbound Cabernet Sauvignon showcases lush texture and bold dark fruit flavors with a slight hint of oak and spice. Cedar and tobacco aromas complement integrated lively tannins and fill out your palate, allowing the wine to be consumed on its own or with your favorite food. The Spellbound Cabernet Sauvignon continues to be one of our shining stars because of the wine's balance and intensity of flavors.
Winemaker's Notes
"With the 2011 vintage, California's Lodi and Central Valley regions experienced warm days that were cooled down in the evenings from the fog off of the Sacramento Delta. These warm temperatures allowed for the Cabernet Sauvignon grapes to become rich in structure and obtain dark fruit characteristics. We are proud to offer our Cabernet Sauvignon, and hope you also find the rich textures, chocolate finish and balanced structure as delicious as we do."
